Quick Pickled Cucumbers

This quick pickling recipe gives a sweet and sour flavour profile to your cucumbers. They’re delicious in a burger or as is, straight out of the jar!


 4 cups apple cider vinegar 

 255g organic raw sugar 

1.5 cups boiling water

3 tablespoons back peppercorns

3 tablespoons salt 

730g cucumber, sliced thinly with mandolin  


  1. In a bowl, mix all ingredients, except for the salt and cucumbers, together until the sugar dissolves.

  2. Slice the cucumbers using a mandolin.

  3. Place the sliced cucumber into a bowl, add salt, and mix gently. Let this sit for 10 mins.

  4. Using your hands, press out all water from the sliced cucumbers. Then place the cucumbers into a strainer and rinse them under cold water.

  5. Place the cucumber slices into sterilised jars and top with the vinegar mixture. Let the cucumber slices soak for at least one hour out of the fridge.

  6. Keep the jars in the fridge and use as needed.
